Love Organic only grows Ceylon cinnamon which is native to Sri Lanka (Ceylon). It is easily identified from Cassia Cinnamon as it is rolled like a Cigar with many layers inside each other. The quill or stick is made by hand by skilled peelers who have inherited this trade over many generations dating back many hundred years.
The bark is rolled in thin soft layers which can be easily crumbled by hand or ground by a fine grater or grinder to make into a powder.
Ceylon Cinnamon is tan brown in color never red. It is sweeter than Cassia Cinnamon and is mild and has a hint of Citrus which slowly develops in your mouth. It is a taste very different to Cassia Cinnamon which has very strong smell and hot and shocks your tongue on the first bite.
